BBQ Stuffed Sweet Potatoes

Two things I love, sweet potatoes and BBQ put them together and you have a delicious combo!

About a month ago I made Skinnytastes slow cooker french dip sandwiches it was a great recipe but made a lot of food! I love when that happens because I usually just freeze whats left over and reuse it for future weeknight dinners. The shredded beef was perfect so many extra meals, I think I ended up getting 4 meals total with the extras. This recipe was one of those meals if you don't have shredded beef on hand chicken would also be great option. Just boil your chicken breasts in water, allow to cool and shred them.

I just sorta winged this recipe, I have made stuffed sweet potatoes in the past so I knew it would be a quick meal to make. It was another husband and kid approved meal and great in my book because it was quick, cheap and can be healthy if you don't load on the cheese. Serve with a side of veggies and call it a night, enjoy!


Items needed:
  • Sweet Potatoes
  • any left over shredded meat 
  • BBQ Sauce
  • Buffalo Sauce (if you like spicy)
  • Black Beans
  • Onion
  • grated colby jack cheese
  • Olive Oil
  • salt and pepper
Directions:
  1. Wash the sweet potatoes, pat dry with a towel. Tear off sheets of tin foil to bake your sweet potato in, it's best to have them ready to go because your hands will be covered in oil when you get started. Once your tin foil sheets are ready take a fork and poke holes in the sweet potato to allow it to cook faster. Once you poked your holes coat lightly in olive oil and salt and pepper. Roll up the sweet potato in your tin foil sheets and bake in a 400 degree oven for 1 hr or until soft in the middle.
  2.  While the sweet potatoes are cooking dice the onion and saute in a bit of olive oil to get soft about 5-8 minutes. 
  3. Next prep your BBQ meat for stuffing, add 3-4 tbls of BBQ sauce to a bowl, then add 2 tbls spoons of buffalo sauce. Mix well. 
  4. Add the sauted onions and a 1/4 c. of black beans to your shredded meat, then add in the BBQ Sauce/Buffalo sauce mixture and mix well. 
  5. Once the sweet potatoes are cooked, allow to cool for a bit and remove from tin foil. Slice a small slit into each sweet potato then stuff with your meat mixture. 
  6. Top the sweet potatoes with the grated colby jack cheese and return to the hot oven for 5-8 mintues, until the bbq meat mixture is hot and the cheese is bubbly. Remove from oven, cool the potatoes a bit then enjoy!  
If you are looking for a way to add more veggies but want to hide them from your kids then hide some in your BBQ meat mixture. I chopped up some zucchinis and sauteed them with my onion, then mixed them in. Once your potatoes are covered in cheese the kids wont see them. My kids didn't even notice I put extra veggies in their meals. Mom-1, kids-0 :)
