Easy Roasted Chicken

I got this recipe from a fellow preschool mom, she would make some of the best roasted chicken I have ever had. Thankfully she was nice enough to offer up her secret recipe, and its probably one of the easiest dinners in the world to make. My husband loves when I make a roasted chicken, and you can get a lot of meals out of one chicken. Ill save left overs for soups, salads the possibilities are endless. Serve with a side of steamed broccoli and mashed potatoes and you have a fast and simple family dinner.


Ingredients:

Cook at 375 degrees

5 lbs Roasting Chicken
1/3 C. Balsamic Vinegar
1/3 C. Honey
1 Tbls. Chopped fresh Rosemary
2 Garlic cloves chopped

 Remove giblets package from inside the chicken. Mix all the ingredients together, pour over roasting chicken, make sure you get some up and under the skin of the chicken. Marinate in the fridge up to 3 hrs. When ready to roast place chicken into a large roasting dish (I usually use a dutch oven)  and roast
the chicken for 1 1/2 hours, or until the juices run clear when you cut between a leg and thigh. You can throw in some potatoes, onions and carrots before roasting for an easy side dish. Let rest for 10 minutes before cutting to serve.
